How is the flavor of soft shell crab different from crab legs?

I’ve never had soft shell crab, but I love crab legs. I’m trying to decide if I should add some to my order.
Do they still have the guts in them, or aren’t you supposed to eat the body of the crab? In the pictures it looks like it’s a whole deep-fried crab on a plate.

I agree with the other chef, when I cooked it we did as an appetizer, and they are fully cleaned, soaking in a marinade of plain milk or buttermilk and seasonings, then either dry seasoned flouring and deep frying, you can pan/shallow fry, you can dip in flour, then egg wash and bread or cracker crumbs and cook the same way, we served it with a New Orleans style Remoulade sauce, but tarter sauce is fine also.
