Could stainless steel rings make your finger turn green?

or is it just a reaction with copper?

Stainless steel rings won’t make your finger turn green.
It’s just the copper content. Cheap gold coloured rings usually have copper in them and they will turn your finger green if they get wet or if your hands sweat a lot. It’s basically just copper rust.
If you have a ring you like that turns your finger green, you can paint clear nail varnish on the inside of the ring. It peels off after a while though and there’s probably a better varnish for metal.
